His only UFC loss came against Diego Lopes at Noche UFC in September 2025; he answered it by out-working Arnold Allen over three rounds at UFC 324. He was originally booked against former interim champion Yair Rodriguez for this Noche UFC main event, but Rodriguez withdrew with a groin injury in mid-August 2026 and Jose Delgado stepped in as a late replacement.

Jose Delgado is a Yuma, Arizona-born featherweight fighting out of The MMA Lab who punched his way onto the UFC roster with a Dana White's Contender Series knockout of Ernie Juarez in August 2024.
